steamed halibut over bbq lentils with spinach

This weeks yummy meal was inspired by a few different people. First off, I had a package of steamed and lightly seasoned lentils in my fridge from the TJ’s that really needed to get eaten. So, I started here, and then wound up here and then got to cooking. In that order, and no other, and now you know.
I did a bit of digging through my stuffed full to the max freezer and found that I did, in fact, still have two halibut steaks laying in wait for this very day. So out they came to defrost while I did some digging through my pretty darn stuffed full fridge and found the homemade BBQ sauce that I’ve been storing since last summer. Ahhh… perfectly aged. Yum, yum! (so sorry, I can’t find the recipe to save my life. Bummer, because I really liked it…)
I used my rice cooker, set to the ‘steam’ option to cook the fish and spinach.
-Fish first for about 10 minutes then add the spinach until it’s just the way you like it.
-I added a generous portion of the BBQ sauce to the lentils, covered it with a paper towel and placed it in the microwave for a minute or two. (this is a super detailed recipe eh? But this really is how it went. In that order, and now you  know.)
-I like to put a bit of lemon juice on my spinach to sweeten it up just a tad. The Hubs does not.
And there you have it. Super simple BBQ lentils with Steamed Halibut and spinach.
Enjoy!
PS – Quinn LOVED the lentils. 🙂
